Fairy Bread Slice

All you need to know


- Slice
- 2 packets white chocolate Tim Tams (165g each)
- 1/3C dessicated coconut
- 100g butter, melted and cooled
- 395g sweetened condensed milk
- 1/2C lemon juice
- 1 packet Jellyologist Classic Raspberry Jelly Mix
- 150ml boiling water
- 1/4C sprinkles, plus extra to decorate

- Jelly Topping
- 1 packet Jellyologist Nans Pavlova
- 200ml boiling water
- 150ml cold water

- Grease and line a 18cm x 28cm slice pan. Line base and sides with baking paper, allowing 2cm above edges of pan.
- Process biscuits and coconut in a food processor until crumbs. Add butter and mix until combined. Press mix over base of pan and refridgerate for 10 mins.
- Whisk condensed milk and lemon juice until smooth. Add boiling water to Classic Raspberry Jelly Mix and stir until dissolved. Gradually whisk jelly into milk mix until combined. Stand for 10 minutes then fold through sprinkles. Pour over base and refrigerate for 2 hours until set.
- Add 200ml boiling water to Nans Pavlova Jelly Mix and stir until dissolved. Add 150ml cold water and mix. Leave to cool for 20 minutes then gently pour over slice. Leave to set for 2 hours.
- Remove slice from pan and slice with a hot knife. Decorate with extra sprinkles before serving.
